Ingredients
4cupswater
4-5teaspoonsloose leaf oolong tea(or about 4 oolong tea bags)
zest of 4 lemons
2/3cupfresh lemon juice(about 4-5 lemons)
1/2cupsimple syrup
¼cuphoney
1pintstrawberries(washed and hulled)
2 ½cupssparkling water(lemon-lime or plain)
ice cubes
strawberry and lemon slices(to garnish)
Instructions
Boil your 4 cups of water and steep the tea until it’s cooled.
Zest and juice your lemons. Then throw the juiced lemon halves into the steeping tea, so that they can infuse the tea with lemon flavor.
While your tea is steeping, make your simple syrup by simmering ½ cup sugar and ½ cup water in a medium saucepan until all the sugar is dissolved. Turn off the heat and stir in the honey, lemon juice, lemon zest, and strawberries.
Pour the mixture into a blender or use an immersion blender to combine all the ingredients. Allow to cool.
Pour the sparkling water into a pitcher. Then strain your tea in, along with your strawberry mixture.
Pour into glasses over some ice cubes. Garnish with lemon and strawberry slices.
