This easy to make and simple tomato egg drop soup is a great addition to any meal and has an extra dimension with added fresh tomato

  • 1 tablespoon oil
  • 2 tomatoes, roughly chopped
  • 4 cups chicken stock
  • ½ teaspoon sesame oil
  • Salt, to taste
  • Pinch white pepper
  • 2 eggs
  • 1 scallion, chopped
  • 1 tablespoon chopped cilantro
  1. Heat the oil in a soup pot or wok over medium high heat. Add the tomatoes and fry for a minute. Add the chicken stock, sesame oil, salt, and white pepper. Bring to a boil, and then lower the heat so that the soup is simmering.
  2. Beat the eggs in a small bowl. Use a ladle to slowly swirl the soup in a whirlpool motion. Keep swirling as you pour a thin stream of egg into the middle of the whirlpool. This is how you get the egg drop effect.
  3. Ladle the soup into bowls and garnish with chopped scallion and cilantro. Serve!
