PUMPKIN GRANOLA

Serves: 6 cups
Ingredients
  • ⅓ cup brown sugar
  • ⅓ cup maple syrup
  • ⅓ cup oil
  • 1 teaspoon vanilla
  • 2 teaspoons cinnamon
  • ¼ teaspoon ground ginger
  • ¼ teaspoon nutmeg
  • ¼ teaspoon allspice
  • ½ teaspoon salt
  • 1 cup pumpkin puree (preferably a sweet pumpkin)
  • 5 cups rolled oats
  • ¼ cup pumpkin seeds
  • ¼ cup sunflower seeds
  • ⅔ cup chopped nuts (walnuts, pecans, almonds, etc.)
  • ½ cup dried cranberries
Instructions
  1. Preheat oven to 250 degrees.
  2. In a large bowl, whisk together ingredients from sugar to salt. Stir in the pumpkin puree. Then stir in the oats, seeds, and nuts.
  3. Spread out in an even layer on a baking sheet. Bake for about 90 minutes, stirring occasionally. Let cool completely and stir in the dried cranberries. Store in an airtight container in a cool dry place for up to 2 weeks.
